2 cups sliced fresh mushrooms
1/2 lb. baby carrots
1/2 lb. (225 g) red potatoes (about 2), cut into 1-1/2-inch chunks
1/4 cup flour
4 small bone-in chicken breasts (1-1/2 lb./675 g)
2 Tbsp. olive oil
1 small sweet onion, cut into thin slices
2 cloves garlic, minced
2 tsp. dried thyme leaves
2 cups Heinz Tomato Juice
1 cup 25%-less-sodium chicken broth
1/4 cup red wine vinegar
1 Tbsp. Lea & Perrins Worcestershire Sauce
1 bay leaf

How do I make it ?

Step 1
Heat oven to 375ºF.
Step 2
Combine mushrooms, carrots and potatoes in 3-L casserole dish sprayed with cooking spray.
Step 3
Place flour in pie plate. Add chicken, 1 breast at a time, turning to evenly coat both sides of each breast.
Step 4
Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 3 min. on each side or until evenly browned on both sides. Remove chicken from skillet, reserving drippings in skillet. Place chicken over vegetables in casserole dish.
Step 5
Add onions, garlic and thyme to reserved drippings; cook 1 min., stirring constantly to scrape browned bits from bottom of skillet. Cook 4 min., stirring frequently. Add remaining ingredients; mix well. Pour over ingredients in casserole dish; cover.
Step 6
Bake 1 hour or until vegetables are tender and broth is slightly thickened, uncovering for the last 20 min.
