3 Tbsp. extra virgin olive oil
2 onions, chopped
2 cloves garlic, minced
1 large eggplant, peeled, cut into 1/2-inch chunks
2 zucchini, cut lengthwise in half, then sliced crosswise
2 cups halved fresh mushrooms
1 red pepper, coarsely chopped
1-1/2 cups Heinz Tomato Juice
3/4 cup Heinz Chili Sauce
3 Tbsp. chopped fresh basil

Step 1
Heat oil in large nonstick skillet on medium heat. Add onions and garlic; cook 5 min. or until softened, stirring occasionally. Stir in eggplant; cook 5 min., stirring occasionally.
Step 2
Add zucchini, mushrooms and peppers; stir. Cook 5 min., stirring occasionally.
Step 3
Stir in tomato juice and chili sauce; simmer on medium-low heat 15 min. or until slightly thickened, stirring occasionally. Remove from heat; sprinkle with basil.
