2 cups flour
1/2 tsp. salt
1 cup butter, softened
1/2 cup plus 1 tsp. icing sugar, divided
1 tsp. vanilla
1 cup Cool Whip Whipped Topping (Do not thaw.)
2 oz. (1/4 of 225-g pkg.) Baker's Semi-Sweet Chocolate, chopped

Step 1
Combine flour and salt. Beat butter and 1/2 cup sugar in large bowl of mixer until light and fluffy. Add vanilla; mix well. Gradually add flour mixture, mixing well after each addition.
Step 2
Divide dough in half. Shape each half into ball; flatten into disk. Wrap individually in plastic wrap.
Step 3
Refrigerate 1 hour or until chilled.
Step 4
Heat oven to 325°F. Cover baking sheets with parchment.
Step 5
Roll out half the dough on lightly floured surface to 1/8-inch thickness. Use 2-1/4-inch round cookie cutter to cut dough into 24 rounds, re-rolling scraps as necessary. Place, 1 inch apart, on prepared baking sheets.
Step 6
Repeat with remaining dough, except use narrow end of 1/4-inch piping tip to cut 5 small evenly spaced holes in each dough round before placing on prepared baking sheets.
Step 7
Bake 15 to 17 min. or until edges are lightly browned. Cool completely on baking sheets.
Step 8
Meanwhile, microwave Cool Whip and chocolate in microwaveable bowl on HIGH 1-1/2 min. or until chocolate starts to melt; stir until chocolate is completely melted and mixture is well blended. Cool until ready to use.
Step 9
Place solid cookies, upside down, on work surface; spread with chocolate mixture, adding about 1 tsp. chocolate mixture to each cookie. Sift remaining icing sugar over tops of remaining cookies; place, sugar sides up, over chocolate-topped cookies. Press together gently to secure.
