4 small boneless skinless chicken breasts (1 lb./450 g)
4 tsp. 30%-less-sodium taco seasoning mix
1/2 lb. (225 g) red potatoes (about 2), thinly sliced
1 cup Cracker Barrel Shredded Light Tex Mex Cheese
1/2 cup salsa
1/4 cup light sour cream

How do I make it ?

Step 1
Heat oven to 400°F.
Step 2
Sprinkle chicken with seasoning mix. Place 1/4 of the potatoes on centre of each of 4 large sheets heavy-duty foil sprayed with cooking spray. Top with chicken, cheese and salsa.
Step 3
Fold foil to make 4 packets; place in single layer on rimmed baking sheet.
Step 4
Bake 30 to 35 min. or until chicken is done (165°F). Cut slits in foil to release steam before opening packets. Top chicken with sour cream.

We've taken a favourite taco chicken recipe and made it over by preparing it with reduced-sodium taco seasoning mix, light shredded cheese and light sour cream. These changes result in a savings of 4g of total fat, including 2.5g of saturated fat, and 180mg of sodium per serving.

If the chicken breasts in your grocery store are larger than 1/4 lb. (115 g) each, they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centres and the juices run clear (165°F).
