1 carrot, cut lengthwise into quarters, then cut crosswise into thin slices
1 cup grape tomatoes, halved
1 cup snow peas, trimmed, sliced lengthwise
1/2 cup chopped red onions
2 Tbsp. chopped fresh parsley
