Fried rice is a perfect way to use up leftover cooked rice. Mix it with colourful sweet peppers and a delicious tomato-based sauce and you've got the perfect meatless main dish, or tasty side dish, to serve with your favourite cooked meat.

1/2 cup Heinz Tomato Ketchup
1/4 cup Heinz Tomato Juice
2 Tbsp. each lime juice and reduced-sodium soy sauce
1 Tbsp. minced gingerroot
1 Tbsp. sesame oil
2 cloves garlic, minced
2 Tbsp. vegetable oil
1 yellow onion, chopped
1/2 cup each finely chopped green, red and yellow peppers
3 cups cooked long-grain white rice, cooled
1 tsp. honey
2 green onions, thinly sliced

Step 1
Mix ketchup, tomato juice, lime juice, soy sauce, ginger, sesame oil and garlic until blended.
Step 2
Heat vegetable oil in wok or large skillet on medium-high heat. Add yellow onions; stir-fry 3 min. Add peppers; stir-fry 5 min. Add rice and honey; stir-fry 2 min.
Step 3
Add ketchup mixture; stir-fry 3 min. or until most the liquid is cooked off. Sprinkle with green onions.

Special Extra
For more heat, add 1 tsp. hot pepper sauce to cooked vegetable mixture in wok along with the ketchup mixture.
Prepare using long-grain brown rice.
