2 onions, chopped
1 clove garlic, minced
2 cups diced potatoes
1 tsp. chopped fresh thyme
1 each red and yellow pepper, chopped
1 yellow zucchini, diced
2 tomatoes, seeded, diced
1/4 cup Kraft Extra Virgin Olive Oil Tuscan Italian Dressing

Step 1
Heat oil in large skillet over medium-high heat. Add onions; cook, stirring occasionally until onions start to brown, 5 to 7 min. Add garlic; cook 1 min.
Step 2
Add potatoes and thyme to skillet. Cook, stirring occasionally, until potatoes are partially cooked, 5 min. Add peppers and zucchini; cook an additional 5 min.
Step 3
Add tomatoes; cook 5 min. Add dressing; stir until heated through. Serve either hot or at room temperature.
