4 tsp. oil, divided
2 stalks celery, chopped
1 small onion, chopped
1 cup chopped carrots
1 tsp. dried thyme leaves
1 lb. (450 g) boneless stewing beef, cut into 1-inch chunks
1 Tbsp. corn starch
2 cups Heinz Tomato Juice with 50% Less Salt
1/2 cup dry white wine
1/2 cup 25%-less-sodium chicken broth
1 Tbsp. Lea & Perrins Worcestershire Sauce
1 Tbsp. tomato paste
1 cup sliced fresh mushrooms

Step 1
Heat 2 tsp. oil in Dutch oven or large saucepan on medium heat. Add celery, onions and carrots; cook 5 min. or until crisp-tender, stirring frequently. Remove vegetables from pan; reserve for later use.
Step 2
Toss meat, in small batches, with corn starch. Heat remaining oil in Dutch oven. Add meat in batches; cook 3 to 4 min. or until evenly browned, stirring frequently. Return all meat to pan along with the cooked vegetables.
Step 3
Add tomato juice, wine, broth, Worcestershire sauce and tomato paste; mix well. Bring to boil, stirring frequently to scrape browned bits from bottom of pan; cover. Simmer on medium-low heat 45 min. Stir in mushrooms; simmer, uncovered, 15 min.
