1 Tbsp. margarine
1 small onion, diced
1 can (19 oz/540 mL) stewed tomatoes, (if desired, use a flavoured variety such as Italian)
4 eggs
1 cup shredded Cracker Barrel Light Cheddar Cheese

Step 1
CONVENTIONAL: In a medium skillet, sauté onion in margarine until tender. Add tomatoes; bring to a boil. Reduce heat; break eggs into pan. Cover and cook until eggs are almost set. Sprinkle with cheese; replace cover. Let stand to melt cheese.
Step 2
MICROWAVE: In a 2 quart (2 L) microwaveable covered casserole, melt margarine on LOW for 30 seconds. Add onion. Cook on HIGH 1-2 minutes UNTIL ONIONS ARE SOFT. Add tomatoes. Cover and cook on HIGH for 5-7 minutes until tomatoes boil. Beak eggs over tomatoes. Pierce yolks. Cover and cook on HIGH 3-5 minutes until eggs are desired doneness. Remove cover. Sprinkle with cheese. Cook on HIGH 1 minute to melt cheese.
