Everyone needs one more potato side dish up their sleeve. Dressing, cheese, onions and peppers: That's all that stands between regular old baked potatoes and these super Tex-Mex spuds.

2 baking potatoes
1/4 cup each Kraft Rancher's Choice Dressing and Cracker Barrel Shredded Tex Mex Cheese
1/4 cup green onions, chopped
Chopped green and red peppers, green onions and cilantro

How do I make it ?

Step 1
MICROWAVE potatoes until tender. Cut in half lenghtwise; scoop out centres, leaving 1/4 in. (0.5 cm) shell.
Step 2
MASH potatoes with dressing, cheese and green onions. Fill potato shells with potato mixture. Top with mixture of red and green peppers, green onions and cilantro.
Step 3
SPRINKLE with additional cheese. Bake at 375°F (190°C) for 15 minutes or until heated through.
