12 spinach-flavoured lasagna noodles
1 pkg. (454 g) ricotta cheese, regular or light
1 pkg. (300 g) frozen chopped spinach, thawed and drained
2 eggs
1/2 cup chopped red pepper
1/4 cup butter
1 small onion, chopped
1 clove garlic, minced
1/4 cup all purpose flour
2 cups milk
1/2 cup Kraft 100% Parmesan Grated Cheese, divided
2 cups Cracker Barrel Shredded Part Skim Mozzarella Cheese

Step 1
Cook lasagna noodles according to package directions.
Step 2
Combine ricotta cheese, spinach, eggs, and red pepper. Season to taste.
Step 3
Melt butter in saucepan over medium heat; cook onion and garlic 2 to 3 minutes. Stir in flour, then milk. Cook and stir until bubbling and thickened. Stir in 1/2 of the Parmesan cheese.
Step 4
Pour 1/2 cup sauce over bottom of greased 13x9x2-inch baking pan. Top with 1 layer of 4 lasagna noodles, overlapping edges slightly.
Step 5
Layer with 1/2 spinach mixture, and 1/2 of the mozzarella cheese. Repeat layers. Top with last 4 noodles.
Step 6
Pour remaining sauce evenly over lasagna; sprinkle with remaining Parmesan cheese. Bake in 350°F oven for 35 minutes. Let stand 10 minutes before serving.
