These Lemon-Coconut Bars have a wonderful tangy lemon flavour combined with coconut. This dessert recipe is a great treat to serve with afternoon tea or as part of a Springtime brunch.

Combine flour and icing sugar in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Press onto bottom of 13x9-inch pan sprayed with cooking spray. Bake 15 min.
Step 3
Meanwhile, whisk eggs, lemon juice, granulated sugar, dry pudding mix and baking powder in separate bowl until blended.

Sprinkle coconut over warm crust; cover with egg mixture.

Bake 20 to 25 min. or until golden brown. Cool completely. Refrigerate 2 hours before cutting to serve.
