This luscious Lemon Meringue Cake features an easy-to-make meringue made with JELL-O Lemon Jelly Powder. The lemon curd-like filling is made in the microwave with fresh lemon juice and PHILADELPHIA Cream Cheese.

4 eggs, separated, divided
1 pkg. (85 g) Jell-O Lemon Jelly Powder
1-1/4 cups sugar, divided
1 tsp. Heinz Distilled White Vinegar
125 g (1/2 of 250-g pkg.) Philadelphia Brick Cream Cheese, softened
1/2 cup fresh lemon juice
1-1/2 cups thawed Cool Whip Whipped Topping

How do I make it ?
Heat oven to 250°F.
Whisk egg whites, dry jelly powder and 3/4 cup sugar in large bowl with mixer on high speed until stiff peaks form. Add vinegar; beat on low speed just until blended. Spread half into 10-inch round on each of 2 parchment-covered baking sheets.
Bake 1-1/2 hours or until edges of meringues are dry, but centres are still soft.
Meanwhile, mix cream cheese, egg yolks, lemon juice and remaining sugar in medium microwaveable bowl until blended. Microwave on HIGH 6 min. or until slightly thickened, stirring after each minute. Cool completely.
Add Cool Whip to cream cheese mixture; whisk just until blended. Stack meringues on plate, spreading half the cream cheese mixture between meringues. Top with remaining cream cheese mixture.

How to Get Round Meringue Layers
Place 10-inch round cake pan on sheet of parchment paper; trace around pan. Repeat on second parchment sheet. Spread meringue mixture onto parchment sheets, using the traced lines as the guides for how large to make the meringue rounds.
