How do I make it ?
Place bulgur in large bowl. Add enough hot water to cover bulgur by 2 inches. Cover with plastic wrap; let stand 30 min.
Meanwhile, combine parsley, tomatoes, cucumbers, onions and mint in large bowl.
Drain bulgur in colander; press gently to remove excess water. Add bulgur to parsley mixture along with remaining ingredients; mix lightly.

For bright colour and texture, prepare this recipe with curly parsley as opposed to Italian or flat-leaf parsley.
Prepare salad as directed, except do not add the lettuce. Refrigerate up to 24 hours before tossing with the shredded lettuce just before serving.
