These shortbread cookies are filled with chocolate-flavoured cream cheese, then topped with apricot jam and chopped macadamia nuts. This is the perfect cookie to serve at your next get-together. But be prepared - your guests are sure to be asking for the recipe!

2 cups flour
1/4 cup corn starch
1/4 tsp. salt
1 cup butter, softened
1-1/4 pkg. (250 g each) Philadelphia Brick Cream Cheese (312.5 g), softened, divided
3/4 cup icing sugar, divided
1 tsp. vanilla
1 Tbsp. unsweetened cocoa powder
2 Tbsp. apricot jam
1/4 cup macadamia nuts, chopped

Step 1
Combine flour, corn starch and salt. Beat butter, 250 g cream cheese and 2/3 cup sugar in large bowl with mixer until blended. Add vanilla; mix well. Gradually add dry ingredients, mixing well after each addition. Divide dough in half; flatten each into disk. Wrap individually in plastic wrap. Refrigerate 1 hour.
Step 2
Heat oven to 350ºF. Roll out 1 disk on lightly floured surface to 1/4-inch thickness. Cut into 30 star shapes, using 3-inch cookie cutter and rerolling scraps as necessary. Place, 1 inch apart, on parchment-covered baking sheets. Repeat with remaining dough.
Step 3
Bake 20 to 25 min. or until golden brown. Cool on baking sheets 1 min. Remove to wire racks; cool completely.
Step 4
Mix remaining cream cheese with cocoa powder and remaining sugar until blended. Spread onto bottoms of 30 cookies; cover with remaining cookies, top sides up, to make 30 sandwiches. Spread tops with apricot jam; sprinkle with nuts.

Make Ahead
These crisp cookies can be baked ahead of time. Place cooled (unfilled) cookies in airtight container or freezer-weight resealable plastic bag. Freeze up to 1 month. Thaw at room temperature before filling and decorating as directed.
Substitute pecans for the macadamia nuts.
