Not your typical potato salad, this easy-to-make potato salad features grilled red potatoes tossed with chopped green onions, chopped red peppers, cheddar chunks, crumbled cooked bacon and a flavourful ketchup-based dressing. Enjoy!

2 lb. (900 g) red potatoes (about 6)
1/4 cup olive oil, divided
1/4 cup Heinz Tomato Ketchup
2 Tbsp. chopped fresh parsley
2 Tbsp. each grainy Dijon mustard and maple syrup
1 Tbsp. Heinz Apple Cider Vinegar
1 red pepper, chopped
4 green onions, chopped
3 slices bacon, cooked, crumbled
125 g Cracker Barrel Medium Cheddar Cheese, cut into 1/2-inch cubes

Step 1
Cook potatoes in large pan of boiling water 8 min.; drain. Rinse potatoes under cold running water; drain well. Cool.
Step 2
Heat barbecue to medium heat. Cut potatoes into bite-size chunks; place in large bowl. Add 1 Tbsp. oil; mix lightly. Spoon into grill basket.
Step 3
Grill potatoes 20 to 25 min. or until tender, turning frequently. Transfer to large bowl.
Step 4
Mix ketchup, parsley, mustard, maple syrup, vinegar and remaining oil until blended. Add to potatoes along with remaining ingredients; mix lightly.

Maple-Mustard Roasted Potato Salad
Cook potatoes in boiling water as directed; rinse, drain and cool. Spread potatoes onto rimmed baking sheet sprayed with cooking spray. Bake in 400ºF oven 25 min. or until potatoes are tender and golden brown. Transfer to large bowl. Add ketchup mixture and remaining ingredients; mix lightly.

Note
If you don't have a grill basket, you can use a large sheet of heavy-duty foil instead. Poke several holes in foil, then place on barbecue grate and use to grill potatoes as directed.
