Sweet potatoes, you've done it again! This time sweet potatoes appear in a quick appetizer alongside maple syrup, toasted pecans and dried cranberries. This appetizer is deliciously different and easy to prepare.

1 sweet potato (3/4 lb./340 g), peeled
1 Tbsp. Philadelphia Light Cream Cheese Product
2 Tbsp. maple syrup
1/8 tsp. salt
16 Ritz Entertaining Selections Buttercrisp Crackers
16 pecan halves, toasted
16 dried cranberries

How do I make it ?

Step 1
Pierce potato with fork; place in small microwaveable bowl. Microwave on HIGH 5 min. or until tender. Mash potato with potato masher or fork until smooth.
Step 2
Add cream cheese product, syrup and salt; mix well. Spoon evenly onto crackers.
Step 3
Top each with a pecan half and cranberry. Serve warm.

Special Extra
For an attractive presentation, cut small piece from one of the bottom corners of small resealable plastic bag. Insert star tip in hole. Fill bag with potato mixture; seal bag. Use to pipe potato mixture onto crackers before topping with pecans and cranberries as directed.
