1/3 cup Kraft Zesty Italian Dressing, divided
1 chicken (3 lb./1.4 kg), cut into 8 pieces
1 red pepper, chopped
1 onion, chopped
4-1/4 cups 25%-less-sodium chicken broth
3 cups long-grain white rice, uncooked
2 tsp. zest and 2 Tbsp. juice from 2 limes
1/2 tsp. ground cumin
2 Tbsp. chopped fresh cilantro

How do I make it ?
Heat 2 Tbsp. dressing in large nonstick skillet on medium-high heat. Add chicken; cook 4 to 6 min. on each side or until golden brown on both sides. Remove from skillet.
Add peppers and onions to skillet; cook and stir 5 min. or until crisp-tender. Add broth, rice, lime zest, juice, cumin and remaining dressing to skillet; stir. Bring to boil. Top with chicken; cover.
Simmer on medium-low heat 25 to 30 min. or until chicken is done (170ºF) and rice is tender. Remove from heat. Let stand, covered, 5 min. Sprinkle with cilantro.

For added flavour, stir 1/4 tsp. cayenne pepper into the cooked vegetables along with the broth, rice, lime zest, juice, cumin and remaining dressing.
