1-1/2 cups thin matchlike English cucumber sticks (2 inches long)
1 carrot, shredded
0.5 cup crumbled feta cheese

How do I make it ?
Mix water and vinegar in large bowl until blended. Add ice; set aside.
Add collard greens to pan of boiling water; cook 30 sec. Drain. Immediately add collard greens to vinegar mixture; let stand until cooled.
Drain collard greens; pat dry with paper towels. Spread hummus down centres of collard leaves; top with cucumbers, carrots and cheese. Fold in opposite sides of each leaf, then roll up burrito style.

The collard green leaves can be cooked ahead of time. Cool, then pat dry as directed. Store, between layers of paper towels, in resealable plastic bag in refrigerator up to 3 days before using as directed.
How to Trim the Collard Green Stems
After the collard greens have been cooked and cooled, place 1 leaf on cutting board. Place small sharp knife parallel to cutting board, then use to cut along large part of stem to remove the stem piece that sticks above the level of the leaf. Be careful to not cut too deeply so the leaf shape is intact to ensure easy folding. Repeat with remaining leaves.
As a bonus, this fresh-tasting wrap is an excellent source of vitamin A from the carrot and collard greens.
