By now you probably know about molten chocolate lava cakes -- a dessert recipe like this doesn't stay hidden for long! Spoon into this warm cake and you'll reveal a molten centre of gooey chocolate. In this version, a touch of cinnamon added to the batter gives the dessert a little spiciness reminiscent of Mexican hot chocolate. If you want to take the spiciness even further, try adding a pinch of cayenne as well.

1/2 cup butter, divided
4 oz. (2/3 of 170-g pkg.) Baker's Bittersweet Chocolate, chopped
1 cup icing sugar
2 whole eggs
2 egg yolks
1/2 tsp. vanilla
6 Tbsp. flour
1/2 tsp. ground cinnamon
1/4 tsp. salt

Step 1
Heat oven to 425°F.
Step 2
Grease 4 (125-mL) ramekins with small amount of the butter; place on baking sheet.
Step 3
Microwave chocolate and remaining butter in medium microwaveable bowl on HIGH 1 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Stir in sugar. Add whole eggs, egg yolks and vanilla; mix well. Stir in remaining ingredients. Spoon into prepared ramekins.
Step 4
Bake 14 min. or until edges are firm but centres are still soft. Let stand 3 min. Carefully run knife around each ramekin to loosen cake from side and bottom of ramekin; invert cake onto dessert plate to unmold. Remove ramekin. Cut desserts in half. Serve warm.

Sprinkle lightly with additional icing sugar, then serve topped with thawed Cool Whip Whipped Topping.
Make Ahead
Prepare batter as directed; pour into prepared ramekins. Refrigerate up to 24 hours. Let stand at room temperature 1 hour before baking as directed.
