1 Tbsp. olive oil
1/2 cup chopped onions
1/2 cup thin zucchini slices, quartered
1/4 cup finely chopped red peppers
2 cloves garlic, minced
4 eggs
1/3 cup Miracle Whip Original Spread
1/4 cup milk
1/4 cup oil-packed sun-dried tomatoes, drained, patted dry and finely chopped
3/4 cup Cracker Barrel Shredded 4 Cheese Italiano Cheese

Step 1
Heat oven to 375ºF.
Step 2
Heat oil in medium nonstick skillet on medium heat. Add onions; cook and stir 5 min. or until tender. Add zucchini, peppers and garlic; cook and stir 5 min. Remove from heat.
Step 3
Whisk eggs, Miracle Whip and milk in medium bowl until blended; stir in tomatoes.
Step 4
Spoon vegetable mixture into 24 mini muffin pan cups sprayed generously with cooking spray; top with cheese. Drizzle about 1 Tbsp. egg mixture over ingredients in each cup.
Step 5
Bake 17 to 20 min. or until centres are set and tops are golden brown. Cool 2 min. Run knife around edges of frittatas to loosen from sides of pan before removing from pan to serve.

Prepare vegetable and egg mixtures as directed; refrigerate up to 24 hours before using as directed.
Special Extra
For more colour and flavor, stir 2 Tbsp. finely chopped fresh basil into egg mixture before using as directed.
