Cut lime half into 4 thin slices; set aside. Grate zest, then squeeze juice from remaining limes.
Beat pudding mix, milk, rum and lime juice in medium bowl with whisk 2 min. Stir in Cool Whip, mint and 2 tsp. lime zest.
Place 1 lime slice in each of 4 small dessert glasses as shown in photo. Spoon pudding mixture into prepared glasses; sprinkle with remaining zest. Refrigerate 1 hour.

Omit the rum. Or, substitute 1 tsp. rum extract for the rum.
