Meatloaf just got a lot more interesting. This ground beef meatloaf is topped with diced tomatoes, Italian seasoning and a blend of cheeses.

1 can (14 fl oz/398 mL) diced tomatoes, undrained
1 pkg. (120 g) Stove Top Stuffing Mix for Chicken, divided
1 tsp. dried Italian seasoning
1 lb. (450 g) extra-lean ground beef
2 green onions, finely chopped
1/2 cup Cracker Barrel Shredded 4 Cheese Italiano Cheese

How do I make it ?
Heat oven to 375°F.
Drain tomatoes, reserving 1/4 cup liquid; discard remaining liquid. Mix reserved liquid with half the stuffing mix, Italian seasoning and egg in large bowl. Add meat; mix well. Press onto bottom of 8-inch square baking dish.
Combine tomatoes, remaining stuffing mix and onions; spread over meat mixture. Cover.
Bake 45 min.; top with cheese. Bake, uncovered, 10 min. or until meatloaf is done (160ºF).
