1-1/4 cups vanilla wafer crumbs
1/3 cup butter, melted
1/4 cup boiling water
1 env. (28 g) unflavoured gelatine
2 pkg. (250 g each) Philadelphia Brick Cream Cheese, softened
1 can (300 mL) sweetened condensed milk
Juice from 1 lemon
2 cups coarsely chopped fresh strawberries
1/4 cup strawberry jelly
2 tsp. cold water
1 cup sliced fresh strawberries

How do I make it ?
Combine wafer crumbs and butter; press onto bottom of 9-inch springform pan sprayed with cooking spray. Refrigerate until ready to use.
Add boiling water to gelatine; stir until completely dissolved. Set aside. Beat cream cheese, condensed milk and lemon juice in large bowl with mixer until blended. Add dissolved gelatine and chopped strawberries; mix well.
Pour over crust.
Refrigerate 3 hours or until firm.
Microwave jelly and cold water in microwaveable bowl on HIGH 20 to 30 sec. or until jelly is softened; stir until blended. Cool slightly.
Run knife around rim of pan to loosen cheesecake; remove rim. Arrange sliced strawberries over cheesecake; brush with jelly.

If you don't have a 9-inch springform pan, line a 9-inch round pan with foil; spray with cooking spray. Use to prepare recipe as directed. When ready to serve, use foil handles to remove cheesecake from pan before cutting into pieces.
