1-1/2 cups graham crumbs
1/4 cup butter, melted
2 cups canned pumpkin
2 pkg. (4-serving size each) Jell-O Vanilla Instant Pudding, divided
1 tsp. pumpkin pie spice
1 tub (1 L) Cool Whip Whipped Topping, thawed, divided
1-1/2 cups cold milk
1/4 cup caramel ice cream topping

Step 1
Mix graham crumbs and butter; press onto bottom of 13x9-inch dish.
Step 2
Whisk pumpkin, 1 pkg. dry pudding mix and spice in large bowl until blended. Stir in 2 cups Cool Whip; spread over crust.
Step 3
Beat remaining pudding mix and milk in medium bowl with whisk 2 min.; spread over dessert. Top with remaining Cool Whip. Refrigerate 4 hours.
Step 4
Drizzle dessert with caramel topping just before serving.

Variation
Substitute a simple homemade caramel sauce for the caramel ice cream topping. Just microwave 8 Kraft Caramels and 1 Tbsp. milk in microwaveable bowl on HIGH 30 sec.; stir until caramels are completely melted and mixture is well blended. Drizzle over dessert as directed.

How to Use and Store Leftover Pumpkin
Spoon leftover canned pumpkin into ice cube trays; freeze several hours or until firm. Remove cubes from trays; place in resealable freezer-weight plastic bag. Store in freezer for later use in muffin or pancake batters. Or, add to your favourite hot prepared chili, soup or stew.
