4 cups prepared apricots (buy about 2 lb./900 g apricots)
2 Tbsp. lemon juice
3-1/4 cups sugar, divided
1 box Certo Light Pectin Crystals

Step 1
Chop unpeeled apricots finely. Measure exactly 4 cups prepared apricots into large saucepan. Add lemon juice. Combine 1/4 cup sugar and pectin crystals. Gradually add to fruit mixture, stirring after each addition until well blended. Let stand 30 min., stirring occasionally.
Step 2
Add remaining sugar; stir 3 min. or until most the sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
Step 3
Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours or until set.
