1 tsp. canola oil
1 lb. (450 g) boneless skinless chicken thighs
1 onion, chopped
3 cloves garlic, minced
1/4 cup Kraft Extra Virgin Olive Oil Italian Pesto Parmesan Dressing, divided
1 can (28 fl oz/796 mL) no-salt-added diced tomatoes, undrained
2 Tbsp. finely chopped Kalamata olives
2 Tbsp. chopped fresh basil
3 Tbsp. Kraft 100% Parmesan Light Grated Cheese

Step 1
Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 2 min. on each side or until browned on both sides. Remove from skillet; set aside.
Step 2
Add onions, garlic and 1 Tbsp. dressing to skillet; cook and stir 4 min. or until onions are tender. Stir in remaining dressing, tomatoes and olives; top with chicken. Simmer on medium-low heat 25 min. or until chicken is done (170ºF) and mixture is heated through, stirring occasionally.
Step 3
Stir in basil; top with Parmesan.
