1-1/2 cups instant white rice, uncooked
1 onion, chopped
2 cups water
1 cup Heinz Chili Sauce, divided
2 tsp. lemon zest
1 tsp. ground cumin
1/2 cup dry bread crumbs
4 small boneless skinless chicken breasts (1 lb./450 g)

Step 1
Heat oven to 400ºF.
Step 2
Combine rice, onions, water and 1/2 cup chili sauce in 1.5-L casserole dish sprayed with cooking spray.
Step 3
Mix lemon zest, cumin and remaining chili sauce in pie plate. Place bread crumbs in separate pie plate. Dip chicken, 1 breast at a time, into chili sauce mixture then into bread crumbs, turning to evenly coat both sides of each breast with each ingredient; place in single layer over rice mixture.
Step 4
Bake 30 min. or until chicken is done (165ºF) and rice is tender.
