1 Tbsp. oil
1 lb. (450 g) boneless skinless chicken breasts, cut into thin strips
1/2 each green and red pepper, cut into thin strips
1/2 red onion, thinly sliced
2 cloves garlic, minced
3-1/2 cups water
3 cups penne pasta, uncooked
1 cup salsa
1 pkg. (35 g) 25%-less-sodium fajita seasoning mix
1 cup Cracker Barrel Shredded Tex Mex Cheese, divided
2 green onions, sliced
1/4 cup fresh cilantro leaves

Step 1
Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 5 min. or until lightly browned, stirring occasionally. Add peppers, red onions and garlic; cook and stir 3 min. Spoon onto plate.
Step 2
Add water, pasta, salsa and seasoning mix to skillet; stir. Bring to boil; cover. Simmer on medium-low heat 10 min., stirring after 5 min. Return chicken mixture to skillet; stir. Cook, uncovered, 2 to 4 min. or until pasta is cooked to desired tenderness and most the liquid is cooked off, stirring occasionally. Remove from heat.
Step 3
Add half the cheese; stir until melted. Sprinkle with green onions, cilantro and remaining cheese.
