1 Chinese eggplant, cut into 1/2-inch pieces
1 cup slivered red onions
1 cup 25%-less-sodium chicken broth
1 can (14 fl oz/398 mL) no-salt-added white kidney beans, rinsed
1/2 lb. (225 g) fresh green beans, trimmed, cut into 2-inch lengths
1 cup loosely packed fresh spinach

Heat dressing in large nonstick skillet on medium heat. Crumble sausage into skillet; cook 5 min. or until evenly browned, stirring frequently. Add eggplant and onions; cook and stir 5 min. or until softened.
Step 2
Stir in pasta sauce and chicken broth. Add beans; stir. Bring to boil; simmer on medium-low heat 6 to 8 min. or until green beans are tender, stirring occasionally.
Step 3
Add spinach; cook and stir 1 min. or just until wilted.
