Step 1
PREPARE and bake cake mix as directed on package. Cool in pans for 15 minutes. Set aside, do not remove from pans.
Step 2
DISSOLVE jelly powder in boiling water, stirring until no powder remains.
Step 3
POKE cake layers all over tops with a large fork or wooden skewer. Pour half the jelly over each cake layer in pan. Chill for 4 hours.
Step 4
UNMOULD one cake layer, round side down, onto serving plate. Spread with 1 cup (250 mL) whipped topping. Place second cake layer on top, round side up. Frost top and sides of cake with remaining whipped topping. Garnish as desired.
Step 5
CHILL for at least 1 hour before serving. Can be made a day ahead and stored in refrigerator.
