Prepare a batch of our Peanut Butter Mousse Cups for a quick and easy treat. Requiring just 30 minutes of prep time, these peanutty delights are easy enough to make on a busy weeknight.

How do I make it ?
Heat oven to 325ºF.
Combine flour and baking soda. Beat butter, peanut butter and sugars in medium bowl with mixer until light and fluffy. Blend in egg. Gradually add dry ingredients, mixing well after each addition.
Roll into 16 (1-inch) balls. Press 1 ball onto bottom and up side of each of 16 mini muffin pan cups sprayed with cooking spray.
Bake 12 to 15 min. or until lightly browned. Cool 5 min. Use end of wooden spoon to make slight indentation in centre of each crust. Cool completely. Remove crusts from pan.
Beat pudding mix and milk in medium bowl with whisk 2 min. Stir in Cool Whip. Spoon into crusts, adding about 2 Tbsp. pudding mixture to each crust.
Melt chocolate as directed on package. Drizzle over desserts.

For convenience, the crusts for these fun desserts can be baked ahead of time. Store the cooled crusts in an airtight container at room temperature up to 3 days before filling as directed. Once filled, the mousse cups can be refrigerated up to 24 hours before serving.
