1 yellow pepper, cut lengthwise into thin strips, then crosswise in half
1/4 cup chopped fresh cilantro

How do I make it ?
Use vegetable peeler to cut carrots into thin lengthwise slices; place in large bowl.
Add all remaining ingredients except cilantro and nuts; mix lightly.
Sprinkle with cilantro and nuts.
