Heat oil in large skillet on medium-high heat. Add vegetables and garlic; cook 10 min. or until mushrooms release most of their liquid, stirring occasionally. Stir in pasta sauce and water; simmer on medium-low heat 5 min., stirring occasionally.
Heat oven to 375°F. Mix egg, cottage cheese and Parmesan until blended.
Spread 1 cup sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with layers of 3 noodles and 1/3 each of the cottage cheese mixture, remaining sauce, mozzarella and pepperoni. Repeat layers twice; cover.
Bake 45 min. or until heated through, uncovering for the last 10 min. Let stand 10 min. before cutting to serve.
