Step 1
Beat cream cheese, butter, sugar and vanilla in large bowl with mixer until blended. Gradually add flour, mixing well after each addition.
Step 2
Refrigerate 1 hour or until chilled.
Step 3
Heat oven to 350°F. Roll out dough to 1/4-inch thickness on lightly floured surface. Cut into desired shapes with 3- to 4-inch cookie cutters, rerolling scraps as necessary.
Step 4
Place, 2 inches apart, on parchment-covered baking sheets.
Step 5
Bake 12 to 15 min. or until edges are lightly browned. Cool 2 min. Remove cookies from baking sheets to wire racks; cool completely.
Step 6
Spoon frosting into pastry bag fitted with desired tip; use to pipe frosting onto cookies. Top with sprinkles.

How to Soften the Cream Cheese
Place completely unwrapped half package of cream cheese in microwaveable bowl. Microwave on HIGH 15 sec. or just until cream cheese is slightly softened.
How to Pipe the Frosting
Insert desired decorating tip in pastry bag. Fold down top of pastry bag about halfway, forming a cuff. Spoon enough frosting into bag to fill halfway. Unfold cuffed top and twist bag until it meets level of frosting in bag. To pipe, hold bag firmly and squeeze from top of bag, keeping bag twisted to prevent frosting from leaking out from top of bag.
Special Extra
Use food colouring to tint the frosting to desired shade before spooning into pastry bag and using to frost cookies as directed.
