Our JELL-O poke cakes are long-time favourites, so we decided to make a version using cupcakes!  Pair up a boxed cake mix and your favourite JELL-O Jelly Powder and turn them into our beloved Poke Cupcakes - your family will thank you.

1 pkg. (2-layer size) white cake mix
1 cup boiling water
1 pkg. (4-serving size) Jell-O Jelly Powder, any red flavour
1 tub (1 L) Cool Whip Whipped Topping, thawed
red or green food colouring
suggested decorations: coloured sugar, coloured sprinkles, crushed candy canes and/or JET-PUFFED Fruit Flavoured Mini Marshmallows

Step 1
Prepare cake batter and bake as directed on package for 24 cupcakes. Cool in pans 10 min. Pierce tops with fork.
Step 2
Add boiling water to jelly powder in small bowl; stir 2 min. until completely dissolved. Spoon over cupcakes. Refrigerate 30 min.
Step 3
Remove cupcakes from pans. Tint Cool Whip with food colouring; spread over cupcakes. Decorate as desired.

How to Easily Poke Holes in Cupcakes
Use a meat fork to make the holes in the cupcakes to fill with the dissolved jelly powder.
