1/2 cup dry red wine
2 cloves garlic, minced
1 tsp. dried oregano leaves
1 tsp. freshly ground black pepper
1/2 tsp. sea salt
8 bone-in skinless chicken thighs (2 lb./900 g)
3 cups 25%-less-sodium chicken broth
3 cups water
1-3/4 cups cornmeal
2 Tbsp. extra virgin olive oil
1 jar (650 mL) Classico Riserva Puttanesca Pasta Sauce
1 Tbsp. unsalted butter
1 Tbsp. chopped fresh parsley

Step 1
Combine wine, garlic, oregano, pepper and salt; pour over chicken in shallow dish. Refrigerate 4 to 8 hours to marinate.
Step 2
Bring broth and water to boil in large pot. Add cornmeal in a slow stream, stirring continuously. Reduce heat and simmer polenta for 35 to 45 min or until creamy, stirring occasionally to prevent lumps from forming.
Step 3
Meanwhile, heat large deep skillet or Dutch oven on medium-high heat. Add oil; heat until hot. Remove chicken from marinade; discard marinade. Add chicken to hot skillet; cook 5 min. on each side or until golden brown on both sides. Remove chicken from skillet; set aside. Reduce heat to low. Add pasta sauce; stir to deglaze the skillet and incorporate all the pan juices. Return chicken to skillet; cover. Simmer 30 min. or until chicken is done (165°F), stirring occasionally.
Step 4
Add butter to polenta; stir until melted. Pour into large shallow dish; top with chicken and pasta sauce. Sprinkle with parsley.
