1 carrot, shredded
1 small red pepper, cut lengthwise into thin strips, then crosswise in half
1/2 Granny Smith apple, cut into short matchlike sticks
1/4 cup each raisins and sliced almonds
1/2 cup Renée's Poppy Seed Dressing
4 multi-grain sandwich buns
3 Tbsp. grainy Dijon mustard
4 small lettuce leaves

Combine first 6 ingredients.
Spread cut sides of buns with mustard.
