1 eggplant slice (3/4 inch thick)
1/4 red pepper
1 portobello mushroom, stem and gills removed
1 slice feta cheese
1 kaiser bun, split
2 Tbsp. Renée's Greek Feta Dressing
1 tomato slice (1/2 inch thick)
1/2 cup loosely packed baby arugula

How do I make it ?
Heat greased barbecue to medium-high heat.
Place eggplant, pepper and mushroom, top side up, on barbecue grate. Grill 3 to 5 min. on each side or until tender, topping mushroom with cheese and adding bun, cut sides down, to barbecue for the last minute.
Spread cut sides of bun with dressing. Fill bun with eggplant, pepper, mushroom, tomato and arugula.
