Heat oil in large skillet on medium heat. Drop 1/3 of the vegetable mixture into 6 mounds in skillet, using about 1/3 cup vegetable mixture for each mound; flatten slightly with back of spatula. Cook 2 to 3 min. on each side or until fritters are golden brown on both sides. Transfer fritters to paper towel-covered plate. Repeat with remaining vegetable mixture.
