Crunchy homemade croutons, tossed with fresh ripe tomatoes, red pepper and fresh basil, make for a fresh and gorgeous summer salad. A perfect way to use up a bounty of summer tomatoes and basil, this easy salad recipe is sure to become a new family favourite. It's special enough to serve as a first course for a summer dinner party, but also makes for an easy side salad on a weeknight out on the deck.

1 small Italian bread loaf (350 g), cut into 1-inch cubes

5 cups halved mixed red, orange, yellow and green cherry tomatoes

1 cucumber, seeded, chopped

1 red pepper, chopped

1 cup crumbled feta cheese

1/4 cup halved pitted Kalamata olives

How do I make it ?

Step 1
Heat oven to 300°F.
Step 2
Spread bread cubes onto rimmed baking sheet. Bake 13 to 15 min. or until crisp and golden brown. Cool 10 min.
Step 3
Place toasted bread cubes in large bowl. Add remaining ingredients; mix lightly.
Step 4
Refrigerate 30 min. Stir before serving.

Substitute chopped fresh parsley for the basil leaves.
