2 Tbsp. olive oil
1 onion, chopped
2 cloves garlic, minced
2 cups long-grain white rice, uncooked
4 cups 25%-less-sodium chicken broth
2 cups loosely packed baby spinach leaves
2 cups frozen peas
1 cup Cracker Barrel Crumbled Feta Cheese, divided
1 Tbsp. lemon zest
1 Tbsp. chopped fresh mint

Step 1
Heat oil in large saucepan on medium-high heat. Add onions; cook 3 min. or until softened, stirring frequently. Add garlic; cook and stir 1 min. Add rice and chicken broth; stir. Bring to boil; cover. Simmer on medium-low heat 15 min. or until rice is tender.
Step 2
Add spinach and peas; cook and stir 2 min. or until heated through. Remove from heat.
Step 3
Stir in half the cheese. Top with lemon zest, mint and remaining cheese.
