Step 1
Brown meat in large nonstick skillet; drain.
Step 2
Add water and seasoning mix; stir. Bring to boil.
Step 3
Stir in rice. Sprinkle with cheese; cover. Simmer on low heat 5 min. Remove from heat.
Step 4
Top with lettuce and tomatoes.

Substitute
Substitute 1 Tbsp. chili powder and 1 tsp. ground cumin for the taco seasoning mix.
Special Extra
Top with coarsely crushed tortilla chips and sour cream along with the lettuce and tomatoes.
