1/4 cup Renée's Classic Ranch Dressing
2 Tbsp. fresh lime juice
2 cups cooked wheat berries, cooled
1 can (19 fl oz/540 mL) chickpeas (garbanzo beans), rinsed
4 cups tightly packed baby arugula
1-1/3 cups grape tomatoes, cut in half
1 avocado, chopped
1/2 cup frozen corn
1/2 cup thinly sliced fresh mushrooms
1/4 cup chopped fresh cilantro

How do I make it ?

Step 1
Mix dressing and lime juice until blended.
Step 2
Combine wheat berries and chickpeas in large bowl. Add arugula and half the dressing mixture; mix lightly.
Step 3
Spoon wheat berry mixture into 4 serving bowls; top with tomatoes, avocados, corn and mushrooms.
Step 4
Drizzle with remaining dressing mixture. Sprinkle with cilantro.

How to Cook Wheat Berries
Cook wheat berries in boiling water in uncovered saucepan 1 hour or until wheat berries begin to burst. Drain and cool wheat berries before using as desired. You will need to cook about 1 cup dry wheat berries to get the 2-cup cooked measure needed to prepare this delicious recipe.
