For a fruity parfait that serves an after-dinner crowd elegantly (and easily!), try this version, made with sweet figs and raspberries.

6 figs, divided
4 cups raspberries
1 Tbsp. sugar
125 g (1/2 of 250-g pkg.) Philadelphia Brick Cream Cheese, softened
1/2 cup Jet-Puffed Marshmallow Creme
3 Tbsp. milk
1/8 tsp. ground cinnamon
8 fresh mint sprigs

Step 1
Chop 4 figs; mash with berries in large bowl. Stir in sugar. Spoon evenly into 8 parfait glasses.
Step 2
Whisk cream cheese, marshmallow creme and milk until blended; spoon over berry mixture in glasses.
Step 3
Cut remaining figs into quarters; place piece on each parfait. Sprinkle parfaits with cinnamon; garnish with mint.

Selecting & Storing Fresh Berries
Look for firm, plump berries that are full coloured for their variety. Fresh berries are perishable and do not ripen after picking, so store in the refrigerator for no longer than 2 days. Rinse with cool water just before using and remove the hulls, if necessary. Berries in season have more flavour and are typically lower in cost than their out-of-season counterparts. Enjoy summer's best all year long by freezing berries at the height of their season. Then, thaw and use as desired.
