1 small red onion, chopped
4 cloves garlic, minced
1 small eggplant, cut into 1/2-inch pieces
1 zucchini, cut lengthwise in half, then crosswise into 1/4-inch-thick slices
1 red pepper, cut into 1/2-inch pieces
1 can (14 fl oz/398 mL) diced tomatoes, undrained

Step 1
Heat oven to 350ºF.
Step 2
Heat dressing in large nonstick skillet on medium heat. Add onions and garlic; cook and stir 5 min. until crisp-tender. Stir in all remaining ingredients except cheese. Bring to boil; simmer on medium-low heat 15 min. stirring occasionally.
Step 3
Spoon into 9-inch-square baking dish sprayed with cooking spray; top with cheese.
Step 4
Bake 15 min. or until heated through.
