These potato bites have all the flavour of creamy, delicious potato salad, with a hint of honey sweetness and Dijon kick, in each little mouthful. 10 small red potatoes (240 g)
6 Tbsp. Heinz [Seriously] Good Mayonnaise
3 Tbsp. Renée's Honey Dijon Vinaigrette
1 tsp. fresh lemon juice
3/4 tsp. dry mustard
1/8 tsp. pepper
1 hard-cooked egg
2 shallots, finely chopped
2-1/2 tsp. chopped fresh chives, divided
1/4 tsp. salt
1/4 tsp. paprika

Step 1
Cook potatoes in boiling water in saucepan 12 min. or just until tender; drain. Place potatoes in bowl of ice water; cool completely. Drain potatoes well, then pat dry.
Step 2
Peel 2 potatoes. Cut into small pieces; place in medium bowl. Cut remaining potatoes in half. Scoop out centres, leaving 1/8-inch-thick shells. Chop removed potato pulp; add to chopped potatoes in bowl. Add mayonnaise, vinaigrette, lemon juice, mustard and pepper; mix well. Chop egg finely. Add to potato mixture along with the shallots and 2 tsp. chives; mix lightly.
Step 3
Refrigerate potato shells and filling 1 hour.
Step 4
Sprinkle insides of potato shells with salt. Spoon filling into potato shells; sprinkle with paprika and remaining chives.
