4 green, red or yellow peppers
3 cups cooked rice, cooled
1 pkg. (200g) Cracker Barrel Shredded Mozzarella Cheese
1 medium carrot, diced
4 green onions, thinly sliced
1/2 cup KRAFT Catalina Dressing
1 1/2 tsp. curry powder
1 tsp. ginger

Step 1
SLICE peppers in half lengthwise, leaving stem intact. Remove seeds.
Step 2
MIX rice with cheese, carrot and green onions.
Step 3
COMBINE dressing, curry and ginger. Add to rice mixture, mixing well.
