5 cups chopped peeled carrots (about 6 carrots)
1/4 cup Kraft Asian Sesame Dressing, divided
1 onion, chopped
1 clove garlic, minced
1 Tbsp. grated gingerroot
4 cups 25%-less-sodium chicken broth
1 can (400 mL) lite coconut milk

Step 1
Heat oven to 400°F.
Step 2
Spread carrots onto parchment-covered rimmed baking sheet. Add 2 Tbsp. dressing; stir to evenly coat carrots with dressing.
Step 3
Bake 35 to 40 min. or until carrots are tender and golden brown, stirring occasionally. Remove from oven.
Step 4
Heat remaining dressing in large saucepan on medium heat. Add onions, garlic and ginger; cook 5 min. or until softened, stirring frequently. Add carrots, broth and coconut milk; stir. Bring to boil, stirring frequently; simmer on medium-low heat 10 min., stirring occasionally. Remove from heat.
Step 5
Blend soup, in small batches, in blender until smooth.

Make Ahead
This delicious soup can be prepared ahead of time. Cool, then refrigerate up to 2 days. Reheat in saucepan on medium heat just before serving, stirring occasionally.
