1 pineapple, trimmed, peeled, cored and cut lengthwise into 16 wedges
2 Tbsp. honey
1 cup thawed Cool Whip Light Whipped Topping
1/4 cup pistachios, toasted, chopped
2 Tbsp. fresh mint leaves

How do I make it ?
Heat oven to 425ºF.
Place pineapple in single layer on parchment-covered rimmed baking sheet.
Bake 40 min., turning after 20 min. Remove from oven.
Heat broiler. Brush pineapple with honey.
Broil, 6 inches from heat, 3 to 4 min. or until pineapple is lightly browned.
Serve topped with remaining ingredients.
